Coconut flour cookies– These are vegan and gluten-free coconut flour cookies that taste simple yet flavorful.
While looking for cookies recipe to try for the Blogging marathon cookie theme I found these here. I had some coconut flour that needed to be used up before getting stale.
So I got the chance and tried these cookies. Girls did not like them because of the coconutty taste but we adults loved enjoying them with our evening coffee.
I tweaked the recipe to make it eggless, vegan and gluten-free and it turned out delicious.

Coconut Flour Cookies
Ingredients
- 1 cup coconut flour
- 1/4 cup coconut oil
- 3 tablespoon coconut sugar
- 2 tablespoon corn starch
- 1/2 teaspoon baking soda
- 1/4 cup chocolate chips, I used chocolate vermicelli
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 190 degrees and line a baking tray with parchment paper.
- In a mixing bowl sift coconut flour, corn starch, and baking soda.
- In another mixing bowl whisk coconut oil and sugar. Add in coconut milk, vanilla extract, and almond milk.
- Mix to combine and make a cookie dough out of the mixture. Add in chocolate chips or sprinkles whatever you are using.
- Pinch out small balls from the dough and flatten to make the cookies. Arrange them on the baking tray.
- Bake in preheated oven for about 15 minutes.
- Remove from oven, cool and store in an airtight container.

Such an easy and tasty recipe for cookies. I have a packet of coconut flour and was looking for recipes. This looks like the perfect place to start!!
Can’t make out that these are made with coconut flour. Will surely bookmark as I have some coconut flour too..those cookies look so good Sapana.
