Chocolate Pie

 I have some chocolates lying in my fridge since long . So I tried to make this eggless chocolate pie from Joy of Baking . It came out very well and we all loved enjoying every last bite of yummylicious chocolate pie. It was a tedious procedure but the result was mouth melting and wonderful .So let’s start the recipe . Yum

Chocolate Pie





Ingredients:

3/4 cup granulated white sugar
2 1/2 tablespoon corn flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt
1 and 2/3 cup milk
1/3 cup heavy cream
90 grams chocolate, finely chopped
1 teaspoon pure vanilla extract
1 tablespoon unsalted butter

For Shortbread Crust:
1 cup all purpose flour
1/8 teaspoon salt
1/3 cup icing sugar
1/2 cup unsalted butter, cold

Method:
For Chocolate Filling:
In a bowl whisk together sugar, corn flour , cocoa powder, and salt. Add in 1/3 cup of the milk and make a paste.

Mix the remaining 1 1/3 cups milk with cream and cook in a heavy bottom pan . Cook till the milk is boiled and then remove from heat. Slowly pour it into the cocoa paste made above and mix until the mixture is smooth.
Transfer the pudding mixture to a pan and cook , stirring constantly, until the mixture thickens .

Remove from heat and pour through the strainer to remove any lumps.
Add the finely chopped chocolate, vanilla extract, and butter in a bowl and pour the hot pudding mixture over it , stir continuously and cover with plastic wrap, to prevent a skin from forming, let cool, and then chill in the refrigerator until thick .

For Shortbread Crust:
Grease a pie pan with butter and set aside..

Take the flour, sugar, and salt in a bowl and combine with hand whisk. Add the cold butter and mix until a bread crumb like consistency appeared.
Transfer the pastry to tart pan and , using fingertips, evenly press the pastry onto the bottom and up the sides of the pan. Gently pierce the bottom of the crust with a fork. Cover and place the pastry crust in the freezer for 15 minutes to chill.

Preheat oven to 220 degrees and bake for 15-20 minutes.

Remove from oven, let it cool and fill with the chilled chocolate filling.

Serve chilled and enjoy.

Serve-6. Cooking time -1 hour
