I have read somewhere about Mediterranean Chickpea salad . Made with lots of green vegetable and chickpea , seasoned with red wine vinegar gives it an exotic taste . I decided to give it some Indian twist .I mixed boiled chickpeas ,diced fresh vegetables and added some crushed Papadum to give it a crunchy texture with spicy touch and it tastes awesome. A slightly different type of salad from daily routine , enjoyed by everyone in my family. A must try for all to relish flavors of summer vegetables! So let’s start the recipe.yum
Ingredients:
1 cucumber , chopped
1 cup grape tomato , halved
1/2 cup finely chopped red onion
1 cup boiled chickpea
1 small garlic clove , minced
1 roasted Papadum
1 tablespoon freshly chopped coriander leaves
For dressing
2 tablespoon lemon juice
1 tablespoon vinegar
1/2 table spoon soy sauce
1/2 teaspoon crushed pepper corn
1/2 teaspoon olive oil
Salt to taste (optional)
Method:
Mix all ingredients under” For dressing “in a bowl.
Take all vegetables and chickpea in a bowl , toss well and add dressing.Mix with spoon.
Add crushed Papadum and stir in.Serve chilled.
If you like this you may also like Ribbon Salad and Orange berries Salad.
Serve-4. Prep time-10 minutes
Note: Add crushed Papadum right before serving to get crunchiness .
