Cauliflower Soup

Cauliflower Soup is my last post from top 100 recipes for the year 2015 from Taste of Home.This was the first recipe that I tried from the site.To be frank,I was skeptical about the taste and did not want to make it but I am glad I tried the recipe and it came out good.My family loved this creamy and cheesy soup to the core.Hubby asked to make it more often .


The cauliflower soup requires few ingredients and can be made in very less time.I like the flavor of celery in soups as it gives a wonderful aroma and taste to the soups.If you are planning to have a soup in the cold weather this soup is perfect to slurp on.Go ahead and gather your ingredients to try it today.

Ingredients:
1 cauliflower,cut in florets
1/2 cup celery,chopped
1/2 cup carrots,grated(I used baby carrots)
3 tablespoon plain flour
1/4 cup butter
1/2 cup cheddar cheese
salt to taste
1/2 teaspoon peppercorn,crushed
2 cups water or vegetable broth
2 cups milk
1 teaspoon chilli sauce

Method:
Boil water in a pan and add cauliflower ,celery and carrots.Add salt and cook for 10-15 minutes or until vegetables are soft and cooked.
In a pan add butter .Stir in plain flour and milk.Cook until it starts thickening.
Add pepper chilli sauce and mix well.Remove from heat and add the cooked cauliflower and vegetables along with the water.
Add in the cheese.Season with more salt and pepper if required.

Serve warm and enjoy.

Serve-6 Cooking time-30 minutes
