Cabbage Rice


For the last day of cooking rice dishes I made this simple and delicious cabbage rice.I had bookmarked this cabbage rice since long and couldn’t do it before as I usually make cabbage pulao that we all love to the core .

But let me tell you ,I am glad I have tried this cabbage rice.The South Indian flavors gave it a nice taste and texture and it has become another favorite rice dish.This recipe can be made using leftover rice and served as the perfect lunch with some curd and salad on those lazy weekends.

Ingredients:
1 cup basmati rice
1 cup cabbage,shredded
1 onion,sliced
2 green chillies,chopped
few curry leaves
2 dry red chillies
1 teaspoon chana dal
2 tablespoon peanuts
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
salt to taste
1/2 tablespoon lemon juice
2 tablespoon oil
water as required
Coriander leaves,chopped(I didn’t used )


Method:

Wash and cook rice using enough water.
Heat oil in a pan and add mustard seeds,chana dal and curry leaves.Stir and add dry red chilli and peanuts. Cook for 2-3 minutes then add sliced onions and green chilles.
Cook for few minutes more and add salt ,turmeric powder and cabbage.Cook covered until cabbage is tender.
Now add cooked rice,stir and cook for 5 minutes.Remove from heat and add lemon juice and coriander leaves.

Serve hot.
