Baked Pasta in Vegetable Sauce-A spicy, tasty and cheesy baked pasta with loads of vegetables in tomato sauce. This one pot baked pasta dish is perfect for lunchboxes.
Once in a while I make pasta for lunch and to pack in lunchboxes too. So to make the dish quickly in the morning I keep the vegetables chopped in the night. Pasta is also precooked in the night before to pack in the lunch box.
So the next morning it just takes few minutes to cook the veggie sauce and rest is done in the oven. Mr. H then warms up his cheesy pasta in the office just before lunchtime.
Basically, I call this dish my fridge cleanup pasta as I would love to add all the leftover vegetable in the refrigerator just before the weekend grocery shopping.
The surprising part is my girls love zucchini in this pasta dish which they never ever try in any other form.
We love the tanginess of olives and the extra spiced jalapenos to make the pasta more delicious. This is one pasta dish that we all love and eat without any tantrums.
Use your favorite vegetables and spices and make it as per your taste and preferences and I am sure you all will love it like we do.

Baked Pasta
Ingredients
- 300 gm pasta, I used fusilli and macaroni
- 1 white onion, chopped
- 4-5 garlic cloves, minced
- 4 tomatoes, chopped
- 1/4 cup sweet corn kernels
- 1 cup spinach leaves
- 1/2 cup green peas
- 1/2 cup zucchini, sliced
- 1/4 cup olives, sliced
- 2 tablespoon jalapenos
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon chilly flakes
- 1 teaspoon peppercorn, freshly crushed
- 1 cup cheese, cheddar+mozeralla
- 1 tablespoon olive oil, extra virgin
Instructions
- Cook pasta according to package instructions or until al dente. Drain and set aside.
- Heat olive oil in a pan and add garlic and onios. Saute for a minute and add tomatoes, and the rest of the vegetables.
- Stir and add oregano, basil, parsley, salt, pepper, and chilly flakes and cook for 5-7 minutes or until tomatoes are soft.
- Meanwhile preheat oven to 200° degree and brush a square baking tray with oil.
- Now add the cooked pasta, the tomato veggie sauce in alternate layers in the baking tray. Top it with layers of cheese, some more seasoning if desired.
- Bake in preheated oven for about 20 minutes. Remove from oven and serve warm.
Notes
Keep the pasta pre-cooked and store in the refrigerator.
Adjust the spices as per your taste.

I pack pasta for the lunch boxes weekly atleast once and this version sounds like a good one. Thanks for the idea.
I love combining different pasta varieties too. Fusili and Macaroni make it super inviting along with veggies. Most of the times, I cook the pasta the day before as well.

Whenever I make pasta I too add loads of veggies, it makes the dish wholesome . Adding cheese is mandatory , a dish which I would love to eat for my dinner , nutritious , delicious ! And looks awesome .
This is a nice, quick to make recipe. Moreover, children love such eatables.
Anytime I ask hubby what should I make for lunch and his answer is veg pasta. If he had his way he’d have it everyday! On my clean up fridge day, its a khichdi where I add any veggie and also sometimes leftover sabji.
