Baby Corn Rice

Baby corn is my daughter’s favorite .It’s immature cob is easygoing  to cook ,full of nutrients and unbelievably tasty.I have always kept them in my fridge and accordingly used in soup , salad , rice and curries.Today I have made a quick and uncomplicated  rice recipe with baby corn.So let’s start with recipe.yum

Baby Corn Rice

Ingredients:
Rice (any type or basmati tukra)-2 cup
Baby corn (slit in halves)-12 in number
Onion (thinly sliced)-1 cup
Carrots (diced)-1/2 cup
Tomato (chopped)-1 cup
Green chillies (chopped)-2 tsp
Cumin seeds-1 tsp
Mustard seeds-1 tsp
Dried whole red chilly-2
Turmeric powder-1/2 tsp
Coriander powder-1 tsp
Paprika-1 tsp
Salt to taste
Chopped coriander leaves-1/4 cup
Water-4 cup
Vegetable oil-3 tbsp
Chopped red or green chilly pickle-2 tsp
Method:
Heat oil in a pressure cooker and add bay leaves,cumin seeds ,dried whole red chilly and mustard seeds.
As crackling starts add sliced onions,sauté for 5 minute till onion becomes dark brown in color.
Now add all spices ,1/2 tsp garam masala and salt in the sequence given above.Mix well
Add chopped tomatoes,green chillies and sauté till oil comes out.
To this add baby corn slits and diced carrots.Add washed rice and chopped coriander leaves .
Top up with 4 cup water and 1/2 tsp garam masala.
(increase or decrease amount of water according to type of rice).

Cover the lid and cook for 1 whistle.Let all steam comes out before opening lid.
Garnish with chopped red chilly pickle and chopped coriander leaves.
Serve hot hot with Mint chutney.
Serve -2.   Cooking time -15 minutes
