Uttarakhand Aloo ke Gutke

Uttarakhand cuisine is the food of the pahari or kumani region of India. Kumaoni food is very simple but very nutritious completely suits the hard environment of the Himalayas. Pulses like Gehet (Kulath) are fashioned into different preparations like Ras-Bhaat, Chains, Faanda and Thatwaani all are unique preparations from the same pulse. Jholi or curry seasoned with curd. Chudkani and Joula made from Bhatt pulses. Cereals like Mandua with rice and wheat are popular.Meat is also prepared but the recipe is quite similar to the way it is prepared in most of North India.

For the state of Uttrakhand under BM#39 my preparation is this simple and tasty potato recipe.This recipe is adapted from here and very easy to prepare. So let’s start the recie.yum

Ingredients:

6 medium sized Potato
1 teaspoon Cumin seeds
1 teaspoon Turmeric powder
2 teaspoon Coriander powder
1 teaspoon Red Chilli powder
Salt to taste
3-4 Whole Red Chillies
1 tablespoon Coriander leaves, chopped
3 tablespoon Oil

Method:

Boil and peel the potatoes and cut the potatoes into small pieces.
Heat oil in a pan and fry whole Red Chillies. Remove from oil for later use.
Add cumin seeds and sauté till crackling then add tumeric powder.
Add boil potatoes pieces with coriander powder , red chilli powder and Salt.
Cook on low heat for 3-4 minutes till everything combined.

Garnish with chopped green Coriander and fried red chillies.

Serve hot.

Serve-4. Cooking time-15 minutes
