Samak ki Kheer is a creamy and tasty gluten-free kheer made with barnyard millets. This kheer is a guilt-free treat for fasting days.
The Samak kheer is super rich and mouthwatering dessert and is totally perfect for those fasting days. And even if you are not fasting you can just indulge in this tempting dessert anytime or can impress your guests.
The tiny little barnyard millets blend so well in milk and make a creamy and tasty kheer. When I am not fasting I sometimes make it for my morning breakfast as a porridge and totally love it.
The best part is that it is gluten free and low carb too, so if you are on any particular diet, you can simply make it at home as per your taste and preferences.
All of us in my family loves to eat it when served chilled rather than the warm bowl. Because then it tastes like Rabri or like a cooled bowl of ice cream.

Samak ki kheer
Ingredients
- 1/2 cup samak/swang/sawa /moriyo or barnyard millet
- 3 cups whole milk
- 1/4 cup sugar or to taste
- 2 teaspoon ghee/clarified butter
- few saffron strands
- 1 tablespoon cashew nuts
- 1 tablespoon almonds
- 1/2 teaspoon cardamom powder
Instructions
- Add saffron in 1/4 cup of warm milk and set aside.Fry the cashew and almonds in ghee and set aside.
- Wash and drain barnyard millet in water.
- Heat milk in a saucepan or heavy bottom pan.Bring it to boil.
- Add the washed barnyard millets in it and cook on simmer for 15 to 20 minutes, stirring occasionally.
- Add sugar ,cardamom powder and cook again for 8-10 minutes.
- Finally, add saffron milk and fried almonds and cashew nuts.
- Serve warm or chilled.

Sapana I’ve made samo kheer but its not as thick as yours. Like your version better. Also like the suggestion of having it for breakfast. We get so fixated with certain ideas (like having this kheer as dessert) that we don’t think otherwise till someone suggests a new idea.
I have never cooked with barnyard milket but seeing this recipe I need to add it to my shopping list to try this recipe.

You are right! This would make an awesome breakfast. I’m especially bookmarking it for Ramadan because, I think, a chilled bowl of this kheer would be a perfect treat after a long hot day of fasting.
