Cauliflower Potato Kurma-A spicy, creamy and tasty cauliflower and potato kurma which tastes just amazing with some piping hot butter smeared naans.

So once or twice in a week, I pack roti sabzi or any gravy curry and flatbread= just to get a little bit of change from the regular salads, and or rice dish.

This cauliflower kurma is so easy to put together and my husband loves it in his lunchbox, so that’s a double win-win for me.

 

Sometime to save the time I make this kurma in the pressure cooker and it is really a breeze for the crazy mornings.

Whatever vessel or method you use the dish always test amazing and is always a hit in my family. The kurma can be made with any or variety of mixed vegetables together.

Cauliflower Potato Kurma

Ingredients
  

  • 1 small cauliflower head, broken in florets
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 1" ginger piece, grated
  • 1 teaspoon red chilli powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • salt to taste
  • 1 teaspoon cumin seeds
  • 2 tablespoon coriander leaves, chopped
  • 2 tablespoon oil
  • 1 bay leave
  • 2-3 cloves
  • 2-3 peppercorns

To grind

  • 1 tablespoon poppy seeds
  • 2 tablespoon cashew nuts
  • 1/4 cup coconut,grated
  • 2 green chillies
  • water as required

Instructions
 

  • Make a paste of the ingredients to the ground using a little water and set aside.
  • Heat oil in a pan and add cumin seeds, bay leaves, cloves, and peppercorns. 
  • Add ginger, garlic, and chopped onions and saute until onions are slightly golden.
  • Stir in the ground masala, salt, turmeric, red chilli powder and garam masala. Let it cook for about 5-7 minutes or until oil comes out from the edges of the pan.
  • Add cauliflower florets, potatoes and a cup of water. Cook covered for about 15 minutes and stir in between.
  • Remove from heat and add chopped coriander leaves. Serve warm with naan.

Notes

Adjust spices as per your taste preferences.

  1. The cauliflower kurma is something like a mashed cauliflower in Sindhi cuisine..we do not add potatoes , but it is on the same lines. The kurma and parathas are a perfect meal very well made and presented.The kurma flavors are interesting.

    Besides making a dry cauliflower and potato sabji I ‘ve not any with gravy. This is one delicious kurma. Just made me realize that there are so many other ways to cook cauliflower and potato together.

  4. Such a perfect combination Sapana, those rotis with that subzi must have tasted yum!..I do make cauliflower with aloo punjabi style, will surely have to make this way next time!

    Potato is something goes well with any vegetable combo and with cauliflower toh it is sohne pe suhaga .. I am drooling over the kurma, it looks so inviting sapna, I would love to have this kurma with phulkas.. In pressure cooker would make it quick, wonderful recipe !!
