Zafrani Pulav with Brown Rice


I can’t believe it’s the last day of our long running full month Blogging Marathon started by Srivalli . We have reached on alphabet “Z” . It was so much fun cooking and clicking , I enjoyed this marathon thoroughly . Of course it was a bit challenging with few alphabets that made me a little worried but I liked the fun behind it. So coming to the last recipe , I decided to make this Zafrani Pulav , known to be a specialty of Hyderabad and Kashmir.

I wanted this recipe to be a little different so I tried it with brown rice. Although it took more time in preparation but the end product was amazing . Zafrani pulav was filled with aromatic and spicy flavors and fragrances. For alphabet “Z” , this is my entry under Regional Food theme of BM#32. So let’s start the recipe .yum

Ingredients:
2 cup Basmati rice/Brown Rice
15-20 saffron strands
1/2 cup milk
2 onion , thinly sliced
2 tablespoon chopped nuts
1 cup yoghurt , beaten

Whole spices:
2 bay leaf
2 black cardamom
2-3 cloves
3-4 Peppercorn
1 cinnamon sick

Spices:
1 teaspoon Cumin seeds
1 teaspoon Kasuri Methi/dried fenugreek leaves
1 teaspoon turmeric powder
2 teaspoon coriander powder
1 teaspoon Garam masala
1 teaspoon Biryani masala
1 teaspoon Red chilly powder
Salt to taste
4 tablespoon Clarified butter
5 cup water or as required
2 tablespoon coriander leaves , chopped

Method :

Soak saffron strands in lukewarm milk , set aside. Wash and soak rice in 3 cups water for 2 -4 hours.
Heat clarified butter in a wok , add cumin seeds , whole spices and chopped nuts . Sir and add chopped onions . Sauté till golden brown in color.
Add all spices and salt , mix and add 2 cup water .

Let the water boil and add soaked rice along with yoghurt . Cook on low to medium flame till rice are done , stirring frequently.
When rice are done , add saffron milk , stir and cook for 2-3 minutes.
Now add chopped coriander leaves , and pomegranate seeds.

Serve hot with any gravy or as it is.

Serve-4. Cooking time -1 hour

  1. you actually made this into a healthier dish, looks perfect, loved the sprinkling of pomegrenates, and btw, loved the experience of doing this marathon with you, we thought so many times similarly, it is like having found like minded foodie 🙂

  2. I really need to try this one out. With so man versions of the pulao I am sure mine will be mishmash of all. I hope it will be just as delicious.
