Water chestnut flour or Singhara Atta in Hindi is very popular in Asian Cooking. Water chestnut is a vegetable rather than a nut and is used in making cakes , pan cakes , rice dishes and many more culinary dishes. They are dried and ground to form flour. It’s very healthy , gluten free and used in Ayurvedic medicines also. So let’s start the recipe .yum
For Dosa
1 cup water chestnut flour/singhara atta
1/2 cup beaten yoghurt
1/2 teaspoon red chilly powder
Salt to taste
For stuffing
2 potatoes , boiled and peeled
1 teaspoon ginger , grated
2 green chillies , chopped
1/4 cup coriander leaves , chopped
1 teaspoon cumin seeds
Spices
1/2 teaspoon red chilly powder
1 teaspoon coriander powder
Salt to taste
1 teaspoon garam masala
1 teaspoon amchur powder/lemon juice
2 tablespoon vegetable oil
Method:
For stuffing
Heat 1 tablespoon oil in a pan , add cumin seeds and grated ginger and green chillies . Sauté for 1 minute.
Add all spices and salt. Mix well.
Now add mashed potatoes and cook for 10 minutes with frequent stirring.
Add coriander leaves and set aside.
For Dosas
Sift flour in a bowl , add yoghurt and 1/2 cup water. Mix well and add salt and chilly powder. Let it set for 10-15 minutes.
Heat a non stick griddle or pan . Apply some oil over it.
Pour a ladle full of dosa batter and spread it with the help of spatula.
Fry from one side for 5-7 minutes and then flip it to other side.
Roast from this side and place a handful of stuffing in the center. Roll from both sides and remove from griddle.
Serve hot with chutney .
Serve-4. Cooking -20 minutes

All the pictures didnt load. My internet connection is not slow. I think you should look into this to make your site better.
