I made this dish fro Pavani’s blog and adapted the recipe as per our taste.Pavani is a wonderful blogger and a very talented photographer.All of us literally drool over her photos and loved all the recipes posted by her.Whenever I visit her blog I would scroll down the page more than 20 times to see the wonderful clicks.
The Pad Thai noodles are a combination of spicy,tangy and crunchy flavors altogether in one dish.No wonder it is the national dish and so popular.I must have tried it earlier,but I guess better late than never.I had tried the recipe three times since then and we loved it.

Ingredients:
For Noodles
200 gm pad thai noodles
200 g tofu,cut in cubes
2-3 scallions,chopped
2-3 garlic cloves,minced
1 yellow onion,sliced
1 cup bok choy,chopped
1 cup bean sprouts
1/4 cup peanuts,roasted
1/4 cup cilantro leaves,chopped
Few lemon wedges
water as required
2 tablespoon peanut oil
For Sauce
4 tablespoon tamarind pulp
2 tablespoon vinegar
2 tablespoon brown sugar
salt to taste
2 tablespoon chilli sauce/sirracha or chilly flakes
1/4 cup Veg broth
2 tablespoon soy sauce
peppercorn to taste,crushed
Method:
Cook pad thai noodles as per package instructions.Drain and set aside.
Heat peanut oil oil in a pan or wok and tofu.Stir fry the tofu for a minute.Remove and set aside.
To the same oil add scallions,onions and garlic.Stir and cook for a minute.
Now add bok choy ,stir and add cooked noodles .Start adding the sauce and keep stirring.
Finally add fried tofu ,bean sprouts, peanuts and cilantro leaves.Mix well.
Serve hot garnished with lemon wedges,peanuts, scallions green and cilantro leaves.
Enjoy!!

Pad thai is my favorite dish and always eat it when we go out to a Thai restaurant. I also make it often at home. You have made it perfectly and the clicks are beautiful!
