So after enjoying Stuffed Barley and Grilled aubergine scallion barely for the last two days, the third recipe has to be something sweet. Barley has a nice texture and tastes best in dessert recipes.
Blogging Marathon#70 Week 2 / Day 3
Theme-One ingredient three dishes
Dish– Barley Porridge
Ingredients:
1 cup pearl barley
2 cups almond milk
2 cups water
1 teaspoon vanilla extract
1/4 teaspoon salt
sugar or honey to taste
For Toppings
apples sliced grated
toasted hazelnuts, chopped
ground cinnamon
maple syrup
Method:
Wash and soak pearl barley in enough water for at least 2 hours.
Drain and place them in a saucepan with 2 cups of water. Let the barley cook for about 20 minutes or until soft.
Once the barley is cooked add milk and let it cook on low to medium heat.
Add sugar or honey, salt, and vanilla extract and stir to combine.
Remove from heat. Pour into serving bowls and garnish with your favourite toppings.
Serve and enjoy.

Never tried making sweet preparations with barley. Porridge looks great.
