Turkish Tulumba Dessert

We are now in Turkey , Turkish cuisine is a refinement of Central Asian , Caucasian and Middle Eastern cuisines.The cooking includes loghter use of spices, preference of bulgur over rice,eggplant and adundant use of olive oil .They usually prefer a very rich breakfast to start a day.

I made this sinful dessert and we loved the last bite of it. Original recipe uses piping bag but I prefered to roll them with hands .They were so juicy and melt in mouth kind .So let’s start the recipe .yum

Ingredients:

2 1/2 cup flour
1 tablespoon fine semolina
1 tablespoon rice flour
1 tablespoon corn starch
2 tablespoon butter
1 pinch salt
3 cup water

For Syrup:
2 1/2 cup sugar
2 cup water
1/2 teaspoon lemon juice
oil for frying

Method:

Boil sugar and water till the syrup becomes thick or one string consistency.Add lemon juice and set aside.

For the dough :
In a pan , add water butter and salt and bring it to boil.Sift all the dry ingredients together and add them to the boiling water. Stir continuously to avoid lumps.Knead the dough by adding water.

Heat oil in a pan and pipe the dough in oil.If not using piping bag , just roll them in any desired shape and pour in oil. Fry till golden brown from both sides.Drain the excess oil using the paper towel and soak in sugar syrup.

Remove from sugar syrup and serve warm.I sprinkled some coconut flakes over it.
