Sukhi Arbi (Taro roots dry curry)

Earlier I had posted recipe of Colocasia curry in spicy gravy .This is another version of the same with dry aromatics and spices. 

A very common Punjabi dish with full of spicy flavors of North India . A must try at home and you will loved it.So let’s start the recipe.yum

Ingredients:
250 gm Colocasia , cut in sticks
1 cup onion , thinly sliced
2 cup chopped tomatoes
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1 teaspoon chopped green chilly

Spices:
1/2 pinch asefetida
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon coriander powder
1 teaspoon red chilly powder
Salt to taste

1/2 cup chopped coriander leaves
2 tablespoon vegetable oil
250 liter Vegetable oil ,for frying
Method:
Wash and soak Arbi sticks in salted water for 10 minutes .Wash again and fry Arbi sticks in hot oil till they become golden in color.Drain on paper towel and keep aside.

Heat oil in a wok or pan ,add asafetida ,garlic and ginger . Saute for 1 minute.

Add onion slices ,stir just to make them a little transparent (kachha pakka).

Add all spices and salt.mix well.

Now add chopped tomatoes and chilly .

Cover the tomatoes with fried Arbi sticks and let it cook for 10 minutes on low heat with closed lid.

Open the lid,stir the veggies and cook for 1 minute till oil comes out.

Remove from heat and garnish with chopped coriander.

Enjoy as a side dish with Chapati ,Rice or Paratha.

Serve-3. Cooking time-30 minutes



Note: Use gloves while cutting taro roots to avoid itching caused by them.
