For the second day of cooking seasonal fruits / vegetables I made stuffed peppers. This is the season of peppers, squashes, cucumbers, mangoes, cantaloupes and many more seasonal veggies and fruits here.
Actually, I am a little late this time. It was supposed to post on Monday, but I couldn’t find time to sit and publish. Clicks were ready, but Leo wasn’t ready to leave me, even for a single second. She is teething now and I can see two tiny teens peeking inside the gums. Hopefully within next week she will be a little calm.
So let’s start the recipe .yum
Ingredients:
4 potatoes,boiled & mashed
1/2 onion ,chopped
1/4 cup peas
1 green chili,chopped
1 teaspoon ginger,grated
1/2 teaspoon cumin seeds
1 teaspoon coriander seeds
Spices:
1/4 teaspoon turmeric powder
1 teaspoon garam masala
1/2 teaspoon red chili powder
Salt to taste
1 tablespoon oil
Few Cilantro leaves,chopped
1/2 tablespoon raisins
1/2 tablespoon cashew nuts
4 medium sized Green bell peppers
Mozzarella cheese
Method:
Preheat oven at 200 degrees.
Was hand pat dry bell peppers . Slice the top and remove the seeds fro inside.set it aside.
Heat oil in a saucepan , add cumin and coriander seeds.
Now add chopped onions and green chillies .Now add peas and Sauté for a minute .
Add all spice powders , salt and potatoes. Stir well.
Cook for 3-4 minutes , add cashew and raisins .Finally add chopped cilantro leaves.
Fill the potato stuffing in peppers , top up with grated cheese and bake in preheated oven for 30 minutes.
Serve warm.
