Strawberry Cheese Pie – Guest Post by Pooja Aggarwal

There is a wind of guest posts blowing over Pooja’s and my space. Yesterday I did a guest post Ratatouille Kebabs for Pooja and today she send me over this delicious , scrumptious and stunning pie made with fresh strawberry and cream cheese . Oh ! I am loving this pie and after seeing the pics my daughter is constanly asking to make it for her . After a lot of ifs and buts I managed to satisfied her and promised to make this pie after Navratri fasts. I dont think there is any need to tell about the very humble Pooja . Everyone knows about this Swad Sugandh lady and the jolly nature of her. I think guest posting for each other is a goodish way to know each other. Few of her recipes that I bookmarked are Churma Ladoo , Drumsticks Curry and Panchmel Sabzi..

About me, my name is pooja, presently residing in US with my husband and beautiful daughter. I blog over “Daily Swad Sugandh” and it talks about various indian vegeterian recipes. Cooking for me is always experimenting and I enjoy to cook and feed the people more than I love to eat. 


Today’s recipe is a dessert which is quick and easy, delicious Fresh Strawberry Cheese-cream Pie.. It is refreshing and delectable chilled pie topped with fresh strawberries and a soft cheesecake style filling over a no-bake pie crust made using marie biscuit.






Ingredients:

For Pie crust: 

1 packege marie biscuit (approx 30 biscuit), 

2 tablespoon powdered cashew nuts, 

6 tablespoon butter – melted 

For Strawberry filling:

2 cups (approx 1 lb) roughly diced strawberries, 

2 tablespoon sugar,

juice from 1 orange

For Cheese filling: 


1-1/2 (12 oz ) packets cream cheese – softened at room temperature, 

1/3 cup heavy cream, 

3 tablespoon sugar, 

1/3 cup whipped cream

Additional strawberries for garnishing.

Method: 

1) for pie crust: Combine crushed marie biscuit with powdered cashew nuts and butter. Mix thoroughly to combine. Press mixture firmly into a 9″ round pie pan. Press the the crumbs along the sides and bottom of the pan, flattening and 

compressing the crumbs along the bottom and walls of the pan till it is smooth, even and flat. Refrigerate the pie crust for 2 -3 hours or till set and firm to touch.

2) for strawberry filling: In a stainless steel sauce pan, add the diced strawberries, sugar and orange juice. On medium-high heat, allow the fruit to simmer and slightly soften for about 5-7 minutes. Remove from the heat and set aside to slightly cool. Once the mixture has cooled sufficiently, empty into a blender and puree to a fine pulp. Refrigerate till needed.

3) for cheese filling: In a large bowl, add the heavy cream and sugar and beat them using electric hand-mixer untill it becomes fluffy. Now add cream cheese to it and again beat until light and fluffy, about 3 to 5 minutes. Next add whipped 

cream and gently fold till it is mixed well. Refrigerate till needed.

4) Next simply combine the cheese filling and strawberry filling (approx 1 cup) with a spatula in a large mixing bowl and empty into the pie shell. Place the pie into the refrigerator for at least 4-6 hours or overnight, until well chilled and set.

5) 1 hour before serving : Finally, slice strawberries, Garnish them around the edge of the pie and again chill for half an hour.

6) Slice the pie and serve.


Enjoy..

Tip: you can do filing in a fancy way too..you can pour first cheese filling in the pie shell and then strawberry filling and using a knife make swirl patterns all over the top of the pie. Also you can replace strawberry pulp with mango pulp…
