Spinach Rice

Today I have prepared Spinach rice , rich in nutrients and packed with goodness of greens . I like rice recipes as they are easy to prepare and loved by everyone . So let’s start the recipe of this super quick and yummy rice.

Ingredients:
1 1/2 cup rice , washed
1 cup spinach , blanched and purée
1 onion , thinly sliced
2 tomatoes , chopped
3-4 green chillies , chopped
2 bay leaves
1 teaspoon cumin seeds
1 teaspoon turmeric powder
2 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon red chilly powder
Salt to taste
1/4 cup vegetable oil
3 cups water

Method:
Heat oil in a pressure cooker or open pan , add bay leaves and cumin seeds . Add sliced onions and fry till golden . Now add all the spices and salt followed by green chilli and tomatoes . Cook till tomatoes tare tender and oil came out from the edges .
Add spinach purée and washed rice , cook for 1 minute and add 3 cups of water . Close the lid of cooker and cook for 1 whistle or till rice are cooked if using open pan .

Remove from heat and serve hot with any side dish.

Enjoy!

Serve -4. Cooking time -20 minutes
