As we are moving forward ,we are tasting virtually so many exotic recipes by our friends in this marathon.This is the most fun and exciting part and guess what ,our bookmarking list is expanding as well.
Now coming to the third combo from world wide cuisine is Spaghetti with meatballs , what ? Meat ..no no I can’t post that you all know I am pure vegetarian .It has to be meatless .Then goes the search for no meat meatballs ,found so many versions on the internet and I was kind of confused .Whether to use tofu or quiona or vegan tempeh etc etc.
Finally came up with this recipe , a hint from others but my own way to make the meatballs with black beans and bell peppers.
Spaghetti and meatballs is the famous combo served in the United States .Despite of the use of same ingredients , this is not an Italian dish at all.So let’s start the recipe.yum

Spaghetti
Meatless Meatballs
Ingredients:
For Spaghetti:
200 gm Spaghetti
2 teaspoon olive oil
1 teaspoon salt
For meatless meatballs:
1 can black beans ,drained
1 cup bell peppers,chopped
1 onion,chopped
3 garlic cloves,chopped
1 cup bread crumbs
2 teaspoon Italian seasoning
1 teaspoon red chilly flakes
salt to taste
pepper to taste
1/4 cup parsley,chopped
2 tablespoon olive oil
Other ingredient
Pasta sauce as required
Parmesan cheese as required
Method:
For spaghetti
In a saucepan ,add enough water.Bring it to boil.
Add spaghetti,olive oil and salt.Cook until spaghetti are tender .
Drain , wash under running water in a colander.
Drizzle more olive oil and toss well.Set aside.
For meatless meatballs
Heat a tablespoon of olive oil in a pan.Add garlic and onions.Stir and cook until light brown in color.
Now add the drained black beans,and bell peppers.
Cook for few minutes.Season with salt , pepper,chilly flakes and Italian seasoning.
Let the mixture cool a little.Transfer it in a food processor alongwith bread crumbs and process until smooth mixture forms.
Add chopped parsley and mix well.Make 10-12 small round balls.
Smear a saucepan with a tablespoon of olive oil.Fry the balls until light brown from both sides.
Meanwhile preheat oven to 180 degrees and line a baking tray with parchment paper.
Transfer the roasted balls to the baking tray and bake for 10-15 minutes to get the firmer texture.
Cook pasta sauce for 5-6 minutes in a pan , add the meatballs and mix gently.Remove from heat.
Serve meatballs with sauce topped over cooked spaghetti .
Enjoy!!

This was on top of my list for combos. Husband did not know any interest in meatballs and hence dropped it. i should have looked for meatless meatballs and cooked for myself. Your version looks good.
