Soya Chaap Masala (+Video)

Soya Chaap Masala is a tasty and delicious curry made with home-made soya chaaps. This curry tastes absolutely lip-smacking with some hot ghee smeared chapatis.

Soya Chaap Masala

Soya chaap is chaap sticks made with soybean dal flour and is widely used in South Asian cooking. Normally the chaaps are marinated in yogurt and spices and cooked in tandoor, served as an appetizer, basically a replacement of meat protein for vegetarians.

I made the soya chaaps at home as we don’t get them here. I have used two methods and will share them both below. You may choose whichever way you’d want to make the chaap.

Ingredients needed for Soya Chaap Masala

  • Soya bean flour-It is easily available in Asian grocery shops.
  • All-purpose flour-Helps in binding the cheap and give them a chewy texture.
  • Tomato-Fresh or canned tomatoes.
  • Onions-Thinly sliced red onions.
  • Ginger -Garlic-Make a paste of fresh ginger and garlic or simply pound it in pestle and mortar.
  • Spices-Minimal spices like turmeric, coriander, red chilli, and garam masala are used.
  • Whole spices-Cinnamon stick, bay leaves, black cardamom, and few cloves.
  • Oil for deep frying
  • Coriander leaves-Adds a nice flavor to the dish.

How to make Soya Chaap Masala?

First of all, in a mixing bowl add soya flour and maida and knead the soy dough. Roll the dough into chapati size, cut strips and roll them on ice cream sticks. While making the sticks, keep a big pot of water for boiling.

Once all the chaap sticks are done, add them in boiling water and cook for 3-4 minutes. Drain immediately into ice-cold water. Let them set in the freezer on a baking tray. Store in freezer-friendly zip locks and they stay for months.

When cooking the soya chaaps, after boiling them in water, deep fry them in oil until golden and crispy from both sides.

Now make the gravy base by cooking sauteing ginger-garlic, onions and tomato into desired consistency gravy. Add the fried soya chaaps in it and make the masala gravy.

Finally add lots of coriander leaves, serve and enjoy.

Serving Suggestions and Variations

Serve the soya chaap masala with chapati, paratha or naan bread. You could also make soya chaap biryani and serve it with raita.

Equipment

Ingredients
  

  • 2 cups soya flour
  • 1/4 cup maida/all-purpose flour
  • 2 onions thinly sliced
  • 1 tablespoon ginger-garlic lightly pounded
  • 3 to matoes chopped
  • 2 green chillies chopped
  • 2 bay leaves
  • 1 cinnamon stick
  • 3-4 cloves
  • 1 black cardamom
  • 1 teaspoon cumin seeds
  • oil for deep frying
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • salt to taste
  • 1/4 cup coriander leaves chopped
  • water as required

Instructions
 

Make Soy Chaap

  • In a mixing bowl add soya flour and maids. Mix well and knead a smooth dough using enough water.
  • Roll the dough into a medium thick round circle. Cut thin strips out of it.
  • Now roll the strips overlapping on ice lolly sticks. Or alternatively, roll them into pinwheel shape.
  • Now bring a pot of water to boil. Add the shaped soya chaaps into the boiling water. Cook for 5-7 minutes and transfer them into cold water.

Fry The Chaaps

  • Heat oil for deep frying in a pan and deep fry the sit chaaps until golden and crispy from all sides.
  • Drain on paper towel and set aside.

Make the Chaap gravy

  • Heat a tablespoon of oil in a pan, add cumin seeds and pound ginger and garlic. Saute for 2-3 minutes.
  • Add whole spices and stir. Now add the onions and cook until golden in color.
  • Once onions are golden add green chillies and chopped tomatoes.
  • Stir and add turmeric powder, garam masala, red chilli powder, coriander powder, and salt to taste.
  • Mix well and cook until tomatoes are soft and oil comes out from it.
  • Finally add fried soya chapps, mix, and add 1/2 cup of water.
  • Simmer and cook until the desired thickness of the gravy is achieved.
  • Garnish with chopped coriander leaves and enjoy.
  • Serve warm with naan bread, paratha or chapati.

Notes

  1. Make sure to not touch the soya chaap in the starting while they are frying.
  2. Adjust the spices as per your taste.
  3. You may also use pureed tomatoes and onions instead of chopped.
