Shell Pasta with Veggie Sauce

I love pastas in sauces preferably with tomato based sauces.Last week while routine grocery shopping I bought four types of pastas including shell pasta , lasagnas , fettuccine and tagliatelle pasta . So on the weekend I made shell pasta in vegetable sauce . The whole house was smelled amazingly with exotic flavors of garlic and herbs .We had a wonderful lunch and a great time .So,let’s start the recipe .yum

Ingredients:
300 gm shell pasta
500 ml passata or 2 cup tomato purée
1/2 cup broccoli florets,chopped
1/2 cup mushrooms,chopped
1/4 cup scallions ,chopped
3-4 garlic cloves,minced
1 white onion,chopped
1 teaspoon basil
1 teaspoon oregano
1 teaspoon rosemary
1 teaspoon peppercorn powder
1 teaspoon vinegar
1 teaspoon sugar
Salt to taste
2 tablespoon olive oil

To garnish
Cheese

Method:
Boil pasta in enough water ,drain and wash under running water . Apply a layer of a teaspoon olive oil and set aside.
Heat olive oil in a pan , add scallions , onions and garlic. Saute for a minute.
Add broccoli and mushrooms and cook for few minutes till veggies are done.
Now add passata sauce , basil , oregano and rosemary. Mix well add salt , sugar and peppercorn powder.
Finally add vinegar and cooked pasta , toss over gently in veggie sauce and cook for 1 minute.

Remove from heat and serve hot garnished with grated cheese.
