Sabudana khichdi is a very simple and delicious khichdi made during Navratri fasting. It is very easy to make and need a few ingredients only like tapioca pearls, potatoes peanuts, and spices.
What is Sabudana khichdi?
Sabudana is sago or tapioca pearls used in making Sabudana khichdi, Thalipeeth or Sabudana vada and various other dishes. In the western part of India, Sabudana khichdi is very popular and available as street food throughout the year.
While in northern parts, people prefer to use it as a portion of food during Navratri or any other fasting day.
Basic Ingredients for Sabudana Khichdi:
The basic ingredients to make the sabudana khichdi are listed below.
- Firstly, Sabudana/Sago/Tapioca pearls- Try to find medium-sized,( not too small or big ) pearls.
- Potato-You can use boiled or thinly sliced raw potatoes. If using raw you will have to cook them a bit more before adding to the khichdi. I prefer boiled potatoes.
- Peanuts-Roasted red peanuts will be perfect to use in the recipe.
- Coriander leaves-For the fresh color and flavors.
- Salt- During fasting, we use rock salt, you may use normal cooking salt.
- Cumin seeds and ginger-Gives a nice flavor and crunch to the dish.
- Green chilli-Use as per your taste preferences.
- Coriander powder-I use my own homemade one.
- Garam masala-Some people do not consume it while fasting, it is totally optional.
- Red chilli powder- Skip if you want to use only fresh green chillis.
- Ghee or Oil-To make the khichdi vegan you can use oil but while fasting I prefer ghee only.
- Lemon juice-For slight tanginess in the khichdi.
How to make Sabudana Khichdi?
This is a very simple recipe to follow if you have got the right soaked sago pearls. Sago consists of starch and when we soak it it sometimes starts missing in the water. So you will need to clear the water as many times as you need until the water is clear transparent not cloudy.
Once this step is done then the rest is super easy. Simply heat ghee, add cumin ginger, green chili, potatoes, and peanuts. Stir and add the rest of the spices and lastly sago pearls.
After that mix everything gently, add coriander leaves and lemon juice. Viola, it is done.
Serving Suggestions:
Serve this humble khichdi with yogurt, raita, or you may even enjoy with tea.
