Sabudana or Sago Kheer is one famous desert prepared all over India during Fasting and Religious ceremonies. Whenever I am fasting for Navratri, I make sure to prepare this simple and delicious pudding. It is a rich and creamy delicacy with lots of nuts and worth trying while you are fasting.
Ingredients Needed to make Sago Kheer
- Sago /tapioca pearls: Medium or small-sized tapioca pearls.
- Milk full cream: Full cream whole milk makes super-rich and delicious sago kheer.
- Sugar: Adjust the amount of sugar as per your taste.
- Cardamom: Fresh green cardamoms for that amazing flavors in the kheer.
- Dried Nuts: Almonds, cashew nuts, raisins or use any of your favorite nuts.
- Ghee: Clarified butter or ghee is used to make the best sago kheer.
- Saffron: To give that beautiful color.
- Rose petals optional: They give that beautiful flavor and color to the kheer.
How to make Sago Kheer?
Step 1. Cook Sago– Soak saffron stands in 2 tablespoons lukewarm milk and set aside. Wash and soak sago pearls in 1 cup of water for 4-5 hours. Rinse under running water till clear water runs through sago pearls.
Heat a cup of water in a vessel, add drained sago in it, and let it cook for 2-3 minutes or until sago pearls are transparent. Wash them under running water and remove the extra starch.
Step 2. Cook with Milk– Now heat 2 cups of milk in a pan and crushed green cardamom. Add cooked and drained sago pearls. Let it cook on low to medium heat for 10-12 minutes with frequent stirring. Add sugar and cook again for 5-7 minutes.
Add saffron milk, stir and cook for 2-3 minutes more. Remove from heat and set aside. Heat 2 teaspoons clarified butter in a pan, add chopped nuts, stir and pour over the cooked kheer.
Mix well and serve hot. Garnish with some more nuts, rose petals and saffron.
Serving Suggestions
Serve the sago kheer with fasting thali, kuttu pakoda or as it is.
Pro Tips
- Make sure to soak the sago pearls for at least 4 hours.
- Do not overcook the sago pearls, just cook them until they are transparent.
- Add more or less milk as per the desired consistency of the kheer.
- Use sugar as per your taste.
- Add dried fruits and nuts as per your choice.

Notes
- Soaking of sago pearls is a must to make delicious kheer.
- You may increase or decrease the amount of milk as per your desired consistency of kheer.
- Please add sugar as much you prefer. You may serve it as a chilled dessert also.
