Ratatouille

I love Ratatouille , the movie and love to watch it with my daughter every time it shows on Star movies . I wanted to make that popular dish ” Ratatouille “since I saw the movie for the first time and finally made it in the Blogging Marathon # 32 for alphabet “R” under International Cuisine 
The word ratatouille comes from Occitan ratatolha and the recipe comes from Occitan cuisine. According to French term ” touiller ” it means to toss food.
It was originally a meal made by poor farmer’s  and was prepared in the summer with fresh vegetables. 

Ratatouille is usually served as a side dish, or as a meal on its own, accompanied by pasta, rice or bread .the main ingredients are Tomatoes,  garlic, onions,  zucchini ,   eggplant, bell peppers, and basil, or bay leaf and thyme . So let’s start the recipe .yum

Ingredients:
1 cup vegetable stock
2 red onions, chopped
2 garlic cloves, crushed
1 red capsicums, deseeded, cut into 2cm pieces
1 yellow capsicum , deseeded , cut into 2 cm pieces
2 eggplant, cut into 3cm pieces
2 tomatoes , chopped or 1 can
1/4 cup tomato paste
2 teaspoon castor sugar
2 zucchini, quartered, cut into 2cm pieces
1/4 cup fresh basil leaves , chopped or 2 teaspoon dried basil
Salt to taste
1/2 teaspoon freshly ground black pepper
2 tablespoon olive oil
Method:
Heat oil in a pan ,  add onions and garlic, and cook, stirring, for 2 minutes or until the onions soften slightly.
Add red and yellow capsicums and eggplant, and cook for 2 minutes. Stir in the tomatoes, tomato paste and sugar. Cover and cook over low heat for 15 minutes.
Add zucchini. Cook for 15 minutes with closed lid until vegetables are soft.

Stir in basil , salt and pepper and mix. Remove form heat and serve with bread , rice or as it is.
