Rajma and Vegetable Kebab

Rajma kebab is leftover rajma combined with loads of vegetables, spices and sunflower seeds turned into delicious and crispy kebabs, what could be better than that?

Rajma Kebabs

Rajma and vegetable kebabs are super simple and delicious kebabs made with leftover rajma curry. Whenever I have leftover rajma, sometimes I make rajma pulao or these kebabs.

The best part is I could easily sneak in all the vegetables I want to and my girls won’t even suspect anything. They love these scrumptious kebabs with mint chutney and or ketchup.

Another interesting thing is you culd add any seeds, or chopped nuts too, to make the kebabs nutty and crunchy.

So whenever you have leftover rajma or in fact any leftover beans curry, do make these kebabs and enjoy.

Ingredients needed to make Rajma Kebab

  • First, Leftover Rajma or any other bean or lentil curry.
  • Onions-Adds a nice crunch.
  • Vegetables-I used carrots and courgette, you could use any of your favorite vegetables.
  • Bread crumbs – To bind the mixture.
  • Spices-Cumin, coriander, salt, garam masala, chaat masala and red chilli powder.
  • Coriander leaves-Adds nice refreshing flavors.
  • Oil-For shallow frying.

How to make Rajma Kebabs?

What if I tell you that this is one of the easiest kebabs ever? Serioulsy, you just need to add all ingredients in a bowl, mix well to combine and shape them into patty shapes.

Now the only thing left is to shallow fry them. Viola the kebabs are ready in just a few minutes.

Can I replace breadcrumbs?

Yes, definitely. Instead of bread crumbs, you could use boiled and mashed potatoes. Corn starch or roasted gram flour as well.

Is it Vegan?

Yes, absolutely right! This is a vegan and vegetarian recipe. If you wish you could add some grated cheese to make the kebabs cheesy but then they won’t be vegan.

Serving and Variations

Serve the rajma and vegetable kebabs with mint chutney, tamarind chutney or ketchup. You could also pair it with strawberry lemonade, mango shake, or virgin mojito.

For variations, you could add bell peppers, broccoli, or any of your favorite vegetables. Fresh herbs like mint and parsley will also add nice flavors.

Equipment

Ingredients
  

  • 1 cup leftover rajma
  • 1 onion finely chopped
  • 1/2 cup carrot grated
  • 1/2 cup courgette grated
  • 1/4 cup sunflower seeds
  • 2 green chillies chopped
  • few coriander leaves chopped
  • 1 teaspoon ginger grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chaat masala
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon lemon juice
  • salt to taste
  • 1/4 teaspoon black pepper powder
  • 1 cup bread crumbs
  • oil for shallow frying

Instructions
 

  • In a mixing bowl add all the ingredients for kebabs except oil for shallow frying. Mix well and knead a dough-like mixture.
  • Heat oil in a pan for shallow frying.
  • Take around two tablespoons of rajma dough in hands and shape it into kebab or patty shape. Likewise, make all the kebabs.
  • Shallow fry from both sides until golden.
  • Remove on the paper towel and serve immediately.
  • Serve with mint chutney.

    Wow, what a delicious way to use up leftover rajma. I’ve never thought of making it into kebab. Next time I’m going to make extra rajma to make these.
