Ragda pattice/patties is the famous Indian fast food or snack which belongs to the popular Street food of Mumbai . This dish is made of two main parts -Ragda a gravy made up of White peas and Pattice -fried patties of potatoes.For the second day of dishes under Combo platter , I have prepared this combo of Ragda-Pattice for BM#33 . So let’s start the recipe . Yum
Ingredients:
For the Potato Patties
4 potatoes, boiled and mashed
4 tablespoon corn flour
1/2 teaspoon red chilly powder
1/2 teaspoon chaat masala powder
1/2 teaspoon garam masala powder
Salt to taste
1 tablespoon coriander leaves , chopped
4 tablespoon oil
For Ragda:
1 cup chickpeas
1 onion, chopped
2 tomatoes , finely chopped
3-4 green chillies, chopped
2 teaspoon ginger , grated
A pinch Asefetida
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
Spices:
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
salt to taste
4 tablespoon cooking oil
Few coriander leaves, chopped
4 cup water or as required
For assembling:
1/2 cup mint chutney
1/2 cup Date tamarind chutney
1 onion, finely chopped
1/4 cup coriander leaves, chopped
1 cup fine sev
2 teaspoon chaat masala
1 teaspoon red chilly powder
Salt to taste
Method:
For patties:
Take all ingredients in a bowl , except oil and mix well.
Make 6-7 medium sized balls of the mashed potato mixture. Flatten them, shape into round patties and keep aside.
Heat oil in a pan or in a non stick tawa .Arrange the patties over it and shallow fry the patties from both sides till golden and crispy.
For Ragda:
Wash and soak chickpeas in 2 cup water overnight or for 4-5 hours. Pressure the chickpea in 2 cup water with a pinch of salt or 5-6 whistles nd set aside.
Heat oil in a wok , add asafetida , cumin seeds and mustard seeds . Now add grated ginger and saute for a minute. Add onion and green chillies and cook till onions are golden in color.
Add the spices and salt , Combine well. Add the tomatoes and cook till oil comes out from edges. (Bhuno)
Add cooked chickpea along with it’s water and cook till all ingredients mixed together and forms a thick gravy.
Remove from heat , add chopped coriander and set aside.
Assembling:
Take 2 patties in a serving bowl or plate , pour generous amount of ragda , sprinkle some onions , few teaspoons of mint chutney , tamarind chutney . Sprinkle some sev , chaat masala , red chilly powder and salt . Garnish with coriander leaves.
Serve and enjoy.
Notes: For patties you may replace corn flour with bread crumbs.
You may add yoghurt in the ragda patties for more flavorings.
