Puff Puff is a traditional African sweet snack made out of fried dough balls. Normally yeast or egg are used to make them but this recipe is without yeast or eggs.
What is Puff Puff?
Puff puff is traditional African sweet snack, known as Cameroon in Nigeria and Bofrot in Ghana.Also there is a similar version called Mandazi exists in Eastern parts of Southern Africa. WHatever the name is it is more or less fried doughnuts or French beignets.
To make puff puff, normally flour, yeast, buter, sugar and eggs are used. But in this recipe I have made the puff puff without eggs, yeast and butter.
Ingredients for No Yeast No Egg Puff Puff
- First, All-purpose flour/Maida-You may also use plain flour or self-raising flour instead(omit soda if using self-raising flour)
- Sugar-For sweetness
- Beer or soda water-To make the batter airy.
- Milk-To make the batter instead of eggs.
- Nutmeg-for a nice aroma
- Oil for deep frying
African Puff Puff is more or less like French beignets or donuts.
Time needed: 20 minutes
How to make Puff Puff?
- Make Batter and Deep Fry
First of all, make a smooth batter with flour, sugar, baking soda, milk, and soda water. Whisk and add more or less water if required. Once the batter is ready deep fry the puff-puff in medium hot oil.
Use spoon or ice cream scoop or your hands to drop the batter in oil. Fry until golden and crispy from outside. Remove on tissue paper-lined plate. Sprinkle with cinnamon sugar and serve warm
.
Variations and Serving Suggestions
Serve the puff puff coated with cinnamon sugar, sprinkled with icing sugar, or with chocolate sauce, strawberry sauce etc. For variations you may add cinnamon, or ground ginger in the batter.
Store the leftovers in air tight box in the refrigerator and warm in MW before serving.

Equipment
- Frying Pan
Ingredients
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 cup sugar
- 1/4 cup soda water
- 1/4 cup milk
- 1/4 cup water
- a pinch nutmeg powder
- oil for deep frying
For cinnamon sugar
- 1/4 cup sugar
- 1 teaspoon cinnamon
Instructions
- Heat oil in a saucepan and keep it on medium-low.
- In a mixing bowl, add flour,baking soda sugar, and nutmeg. Stir in milk, water, and soda water.
- Mix well until everything is incorporated.
- Scoop a few balls in oil with the help of a spoon or use your hands.
- Fry for few minutes until the bottom is golden brown. Flip them and fry from the other side.
- Drain on paper towel. Roll in cinnamon sugar and serve warm.

Notes
- Instead of all-purpose flour and soda you may use a cup of self-raising flour.
- The original recipe used beer but I have adapted the recipe to use soda water.
- You may also make them with baking powder or yeast.

Hello Kat, I haven’t made them with baking powder but I guess you could use 1/4 teaspoon of baking powder for a cup of all-purpose flour.
