Papdi Chaat

We all like Chaats, these exotic , tangy and spicy treat makes everyone mouthwatering . I had decided in the starting that “P” has to be Papdi Chaat , as it was in my to do list since long. So I picked all the ingredients and prepared these yummy Papdi chaat . We all loved them and enjoyed till the last bite. The whole platter was so tasty and spicy that everyone was saying Ooh ! Aahh! while eating but no one wants to stop grabbing.

Ingredients:
For the papdi

1 cup all purpose flour
1/2 teaspoon nigella seeds
1 tablespoon vegetable oil
more oil for frying
1/2 teaspoon salt
1/2 cup water or as needed

For Papdi chaat
20 crisp papdis
250 gm smooth curd/yogurt
1 cup chickpea , boiled and drained
1 large potato, boiled and chopped
1 onion ,finely chopped
mint chutney
date tamarind chutney
1 teaspoon red chili powder
2 teaspoon chaat masala
1 teaspoon salt
1/4 cup coriander leaves, chopped
1 tablespoon lime juice
1 /4 cup sev (optional )

Method:

Take all ingredients in a bowl , knead a soft dough using appropriate amount of water. Cover with kitchen towel and let it rest for 10 minutes.
Make a round ball from dough , dust it with dry flour and roll a thin circle on a flat surface . Cut out small rounds with a cookie cutter or lid of a small jar. Prick it with fork .
Heat oil in a wok , fry the papadis on low to medium heat till crisp and light brown from both sides.
Remove on absorbent paper, cool and store in air tight container. Use whenever required.

For Papdi Chaat
Arrange the papdis in a shallow bowl or plate.
Top with chopped boiled potatoes and cooked chickpeas.
Add chopped onions , sprinkle some chaat masala and red Chilli powder.
Top with 2 teaspoon of cold yogurt , mint chutney and sweet chutney.
Sprinkle chaat masala, red chili powder, and salt.Add a dash of lemon juice.
Garnish with coriander leaves and sev namkeen.

Serve and enjoy.

Serve-4. Cooking time-20 minutes.

Note: Serve the papdi chaat immediately or else it will become soggy.
