Paneer Kheer | Chanar Payesh

A healthy and rich protein packed paneer kheer which is also known as chanar payesh. Perfect to enjoy during Navratri fasting too.

I made this paneer kheer for the second day of Navratri thali and we all totally loved it. However, it felt like kind of super rich and filling that you won’t need anything after that.

The husband told me that back when he was a boy he used to eat something similar like this made from the first milk of buffalo and all kids would love it.

This chanar payesh is a popular dessert in Bengali cuisine and is prepared for Durga Puja. Actually, most of the paneer based sweets are from Bengal and it’s now they are getting popular worldwide.

Ingredients

  • 1 litre whole milk
  • 1 cup fresh paneer, crumbled
  • 1/4 cup almonds, sliced
  • sugar to taste
  • 1 teaspoon cardamom powder
  • 1 teaspoon ghee
  • few saffron strands

Instructions

  • Heat ghee in a pan and roast the almond slices. Keep them aside.
  • Heat milk in a heavy bottom pan and start cooking it on low until it starts boiling.
  • Once milk starts boiling stir frequently and cook on simmer until it starts thickening a little.
  • Now add the saffron strands, cardamom powder, crumbled paneer and cook for a few minutes more.
  • Add sugar to your taste and add the chopped almonds slices.
  • Remove from heat and serve it warm.

Notes

I did not add any sugar as it was sweet enough from paneer.
You may add nuts of your choice to make the kheer more delicious.
Even you can add condensed milk instead of sugar.
