Ingredients
For dough
1 cup All purpose flour
3 tablespoon vegetable oil
1/2 teaspoon salt
1/4 cup water
Oil for frying
For Filling
1/2 cup Onion , chopped
1 teaspoon Fennel seeds
1 teaspoon cumin seeds
1/2 teaspoon red chilli powder
1/2 teaspoon Turmeric powder
1/2 Cumin powder
1/2 teaspoon Coriander powder
Salt to taste
Few coriander leaves , chopped
2 teaspoon vegetable oil
Method :
Heat oil in a pan and add cumin seeds and fennel seeds , stir and add onions.
Sauté onion till translucent and add coriander powder , red chilli powder, cumin powder , turmeric powder and salt. Mix well.
Add coriander leaves and set aside.Divide the onion filling in to equal portions and keep it a side.
Take all purpose flour , salt and oil in a bowl , mix and add water slowly to knead a firm dough .Keep it covered and Let it rest for 10 minutes.Heat oil for frying in a pan .
Make small balls from the dough and flatten it on the palm . Fill it with 1 teaspoon of filling and cover from all sides. Flatten again in palms to give them Kachori shape and fry in hot oil on low to medium heat till golden and crispy .
Serve hot with any side dish.
Serve-2. Cooking time -20 minutes
For Water chestnut Halwa
1/2 cup water chestnut flour /Singhara Atta
1/4 cup clarified butter
1/2 cup sugar / jaggery
5-6 Almonds, sliced
5-6 raisins
1 teaspoon coconut , dessicated
1 1/2 cup water
2 cardamom , crushed
Method:
Boil water with crushed cardamom in a pan and set aside.
Heat clarified butter in a heavy bottomed pan and fry the almonds and raisins for few seconds , remove and set aside Add water chestnut flour and keep stirring till the flour turn brown in color .
Add the boiled water and stir continuously with out forming any lumps.Add sugar and cook till it melts and halwa leaves the sides of pan.
Garnish with almonds , coconut and raisins and serve warm .
Serve-4. Cooking time -20 minutes
