No onion no garlic lauki kofta is a very delicious kofta curry made with bottle gourd and without onions and garlic. This is one of the best koftas curries you would ever try.
What is Lauki Kofta?
Lauki ke Kofte , Koftas are fried savory dumplings usually made from a variety of vegetables like raw banana, yam, lotus stem, bottle gourd, and potato, etc. I have already posted the recipe of Shahi Kofta made from raw banana.
No onion no garlic lauki kofta
This is another famous kofta curry made from bottle gourd or dudhi /Ghiya and is a traditional Punjabi cuisine. Normally, onions and garlic are used to make the gravy base but in this recipe, I have made it without onions and garlic.
Some people in India don’t consume onions and garlic, they prefer saatvik food. Or whenever we are fasting we don’t consume onions and garlic, so that’s the reason I made this curry without them.
Basic Ingredients for Lauki Kofta Curry:
- First, Lauki/bottle gourd-Pick fresh bottle gourd which has lots of moisture and makes very tasty kofta.
- Tomato-Adds a nice tang in the curry.
- Ginger- Adds a nice pungent flavor in the curry.
- Chickpea flour-To help in binding the koftas.
- Oil -To deep fry the kofta, however, you can shallow fry or make them in appe pan as well.
How to make Lauki ke Kofte?
The first step is to wash, peel and grate the lauki. Add in the seasonings and spices and make the kofta balls. Next deep fry the kofta and keep them ready to be used in the gravy.
Finally, make the gravy base by sauteing tomatoes along with spices until oil separates from the gravy. Adjust the consistency by adding more or less water. Garnish with coriander leaves and enjoy.
