Here is a tasty dish with lots of of flavors that won’t overpower your next Mexican entree . This makes a substantial portion so it is perfect for large gatherings or potluck supper. Treat your family with this easy Mexican style rice dish. Serve it with salsa and fresh vegetable platter on the side and lots of icy lemonade. We have started second week of BM # 31 in which I have selected to cook under Mexican Cuisine , and this entree goes directly from Mexico to BM .So let’s start the recipe .yum

Ingredients:
1 red bell peeper, sliced
3 tomatoes , roughly chopped
1/2 cup peas
6-7 garlic cloves
1 onion , finely chopped
8 tablespoon olive oil
2 cup rice
2 tablespoon Dijon mustard
2 teaspoon red Chilli powder
Salt to taste
4 cup water or as required
Method:
Heat 4 tablespoon olive oil in a wok , add red bell pepper and garlic cloves . Fry for 2-3 minutes. Set aside.
Into the same oil fry the tomatoes . Put the fried tomatoes , bell pepper and cloves in along with red chilly powder.
Heat remaining 4 tablespoon oil in the wok . Add chopped onions , sauté for 5-7 minutes.
Now add peas , bell pepper paste made , salt , Dijon mustard and mix well.
Add washed rice and 4 cups of water. Cook on medium to low flame with closed lid for 10 minutes or till done.
Remove from heat and serve hot with salsa.
Serve-4. Cooking time-25 minutes
Note: Add water as per type of rice .
