Matar Kulcha Recipe | How to make Delhi Style Matar Kulcha

How to make Delhi Style Matar Kulcha, Matar Kulcha recipe is a very simple yet absolutely mouth-watering street food from Delhi.

Even the name of the dish makes me feel nostalgic, when I was in school the street hawkers would stall outside the school and we used to buy matar kulcha afterward. Whenever we would want to eat outside food the matar kulcha had been the first choice always.

If you have been to Delhi you can find the kulce wala bhaiya (street hawkers) on almost every corner of the street, outside schools, offices and on famous visiting spots. This is one super tasty and filling street food that people love to eat for their lunch.

Basically, there is no rocket science or a recipe as such, the spices added in the cooked white peas taste amazing when topped with fresh chopped tomato, onions.

Normally white or yellow peas are used to make Matar kulcha but you can also use chickpea aka chole to make this tempting combo. If you remember my Kulcha Recipe post I used the chole to pair with kulcha.

Anyways whatever pea you would use, I am sure you will love this amazing combination hailing from the streets of Delhi.

Matar Kulcha

Ingredients
  

  • 200 gm dried white/yellow peas
  • 1 teaspoon ginger, grated
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chilli poder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur powder
  • 1 teaspoon chaat masala
  • salt to taste
  • 1 teaspoon oil

For topping

  • 1 onion, thinly chopped
  • 1 tomato, finely chopped
  • 2 green chillies, finely chopped
  • 1/4 cup coriander leaves, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon chaat masala

Instructions
 

  • Wash and soak shite peas in enough water for 6-8 hours or overnight.
  • Once soaked properly, cook the white peas in 4 cups of water and dash of salt in a pressure cooker for about 4 whistles.
  • Let the pressure in the cooker release naturally and set the peas aside.
  • Heat oil in a pan and add ginger, roasted cumin powder, salt, chilli, amchoor, chaat masala and garam masala in it. Stir and remove from heat.
  • Add the seasoned masala oil into the cooked white peas and mix well to combine.

To serve

  • Divide the matar among 4 bowls. Top with chopped onions, tomato, green chilli and coriander leaves.
  • Drizzle lemon juice and sprinkle chaat masala on top.
  • Serve with kulchas and enjoy.

Notes

Adjust the number of spices as per your taste and preferences.
Some street vendors use a tamarind chutney to make the matar tangier, I skipped that.
You may also use white chickpeas instead of white peas.

    Reading the title “Matar Kulcha”, i thought it was the recipe of kulcha stuffed with peas masala. ha,ha . This matar kulcha sounds so delicious and love the flavor going into this ciurry, definitely it makes a perfect pair with Kulcha.

  5. At first I thought it was matar wala kulcha (as is kulcha stuffed with matar), but then realised it’s a combo meal like kulche choley! Cool

    It must be so amazing to grow up with so much street food around. When I was growing up in Nairobi, there was hardly any street food back then. While we walked back home from school the only thing we could do is pluck mulberries and loquat from trees that lined the road. Now its a different matter. Love your matar preparation.

    I made this exactly as per the recipe and it turned out very good. Even my mother who is not a fan of these ‘street stunt’ food was impressed.
    Straying fro the recipe I also added some Imli water in true street vendor style. And I had made a spicy fired red chilli masala for an earlier dish that I used as a garnish for this one.
    Tonight I am making this again and I am thinking about adding a bit of dhania powder to the spice mix. I have noticed that the masala of the street guys is bulkier and adds a certain texture too to the matar apart from the flavour.
    An observation: I remember the kulchas of my childhood used to be round and flat, not very spongy and a bit sour in taste. Nowadays the kulchas available commercially are just like bread, in taste as well as texture.
