Boiled potatoes are versatile and quick to made salad,curry or snack and of course are naturally rich in vitamins and minerals.I always keep up some in my fridge .
Today I am preparing masala aloo . So let’s start with recipe.yum
Ingredients:
Potato(boiled and it in cubes)-3 cups
Onion (chopped)-1 cup
Green chilly(chopped)-2 tsp
Ginger(grated)-2 tsp
Tomato(chopped)-1 cup
Yoghurt-1/2 cup
Vegetable oil-2 tbsp
Asafetida-1/2 pinch
Cumin seeds-1 tsp
Black mustard seeds-1 tsp
Coriander powder-1 tsp
Turmeric powder-1 tsp
Garam masala-1 tsp
Chopped coriander -a handful
Method:
Heat oil in a pan and add asafetida,cumin and mustard seeds .
Saute for 1 minute till popping appears then add ginger and saute.
Add onion and green chillies.Stir and add all spices and salt except garam masala.
Add potato cubes sauté for 5 minutes and add yoghurt and chopped tomatoes .Cook till oil comes out (for 5-6 minutes) remove from heat and add chopped coriander and garam masala.
Serve -3. Cooking time -20 minutes
