Kuwaiti Biryani

For next alphabet “K”, We have turned our plane from Japan to Kuwait.
Kuwaiti cuisine is very important to the culture of Kuwait. It is said that fish is a very significant part of the Kuwaiti diet .

Kuwaiti cuisine is an infusion of Mediterranean, Persian, Arabian and Indian cuisines. A famous dish like our biryani is made with basmati rice , spices , fish and meat.

I tried to recreate the traditional Fish Biryani into Veg Biryani. This was the first time I baked the rice biryani in oven. All the flavors of spices and aromatics were increased twice and the outcome was fabulous. We had a great lunch treat with this dish. So let’s start the recipe .yum

Ingredients:

2 cups mixed vegetables,cubed (I used cauliflower,potato,green capsicum , bell pepper ,  peas)
2 onions, chopped
1 teaspoon ground cumin
1 clove garlic, crushed
1 teaspoon ginger,grated
1 teaspoon turmeric powder
Salt to taste
A pinch of cayenne pepper
Peeper to taste
2 tablespoon lemon juice
3 tablespoon oil

For the rice:

2 cup basmati rice
2 bay leaves
2 cinnamon stick
1 teaspoon oil
2 tablespoons coriander,chopped

Method:
Mix all the marinade ingredients together in a bowl and season with salt and pepper to taste and set aside.

Add the veggies into the marinade and mix gently. Cover with cling film and let it rest for 2 hours.

Preheat the oven to 150°C . Heat a nonstick or iron skillet to high. Brush it with oil. Arrange the veggies in a single layer.  Grill the veggies for six to seven minutes until the edges of the veggies are nicely browned.

Boil enough water in a pot and add bay leaves , cinnamon , a teaspoon oil and salt.Add drained rice and boil for 5-7 minutes.Set aside.

Add the cooking juices into the rice and stir . Place a few pieces of veggies and the onions in a single layer in the base of a casserole. Sprinkle chopped coriander and cover with a layer of rice. Alternate layers of veggies, coriander and rice and finish with rice.

 Place a wet kitchen towel or foil over the rice, then cover the casserole very tightly. Bake for 20-25 minutes so the rice cooks.

Garnish with coriander and serve.
