Gujarati Khandvi

Our next stop in the BM#39 , Indian state food odyssey is Gujarat .The cuisine is mainly vegetarian influenced by Hinduism and Jainism. Khichdi , Chaas and pickle are the staple food and the main cooking includes steaming of vegetables with different spices. Whether a Gujju or not Everyone likes the soft and juicy Dhoklas , Theplas , Khakra , Khandvi , Farsan and the list is endless. This is the first time I tried Khandvi at home but the result was amazing . I adapted the recipe from here . So let’s  start the recipe .yum

Ingredients:
For batter

1/2 cup Besan/gram flour
1/2 cup Curd/yoghurt
3/4 cup Water
1 pinch Asafetida
Salt to taste
1/4 teaspoon Turmeric
3 tablespoon Coconut, shredded
Few Coriander leaves, chopped

To temper:
2 teaspoon oil
1 teaspoon Mustard seeds
1 pinch Asafetida

Method:
Take all the ingredients for batter in a bowl . Beat it until well combined using a balloon whisk.
Heat this in medium flame with constant stirring. Make sure to stir through bottom or else it will stick . Stir until the mixture thickens and cooked evenly.
Keep ready a clean counter top or a cutting board or backside of plate and quickly transfer the batter to the counter top.
Gently spread the batter thinly using the spatula. Let it cool down completely.
Cut lines with knife into strips. Trim the edges. Roll it gently into cylindrical shapes.

Arrange in a serving plate and temper with the ingredients to temper and spread it over the khandvi.

Garnish with coriander and grated fresh coconut.

Serve cooled.
serve -6. Cooking time -15 minutes

  1. Khandvi came out perfect. I made it couple of times, first time for ICC and the second time couple of months ago after the BM 39 was announced. I guess the key cooking the besan to right consistency.
