As there are many variations of shrikhand using fruits and nuts so you can make as many kinds of shrikhand as you want. Kesar shrikhand is one such variation of shrikhand withthe flavors of saffron. It tastes absolutely amazing when served chilled as a dessert with or after meals.

Ingredients Needed for Kesar Shrikhand

  • Yogurt: Homemade or store-bought plain yogurt.
  • Sugar: Powdered or icing sugar.
  • Saffron: Few saffron threads
  • Nuts: Nuts of your choice like almonds, pistachios, etc.

How to make Kesar Shrikhand

Place the yogurt in a cheesecloth or muslin cloth over a strainer on the top of a bowl and let it rest in the refrigerator until all the water from yogurt strains out.

Add saffron strands into the milk and set it aside. After 2-3 hours you will get thick yogurt, transfer it to another bowl and keep the protein-rich water residue to knead dough or in making deals, etc.

Into the thick yogurt add powdered sugar and saffron milk. Whisk until combined. Transfer them into the serving bowls. Garnish with chopped pistachios.

How to strain the yougurt?

Make sure to strain all of the water from the yogurt. This process can take a few hours from 2-4 hours to be precise. Keep the yogurt in the refrigerator to strain so it doesn’t get sour at room temperature.

Can I use Greek Yogurt?

Try to use plain fresh yogurt to make the best shrikhand. If desired you can definitely use greek one.

What if my yogurt is sour?

Adjust the amount of sugar as per the taste of your yogurt.

Can we make it Vegan?

Yes wou can try making it with soy or coocnut yogurt.

How to store Shrikhand?

Try making it only when you are ready to consume. But if desired, you can store the leftovers in the refrigerator for 2 days maximum.
