What is Jalebi?

Jalebi is a classic Indian sweet dish made with a fermented batter of lentils and or flour. The flour batter is then shaped into a circular pretzel shape and deep-fried in hot oil, followed by soaking in the sugar syrup.

They are quite popular in West Asian and Indian subcontinent cuisine and often served with Rabri, Milk, and or Poha.

INSTANT VEGAN JALEBI?

To make jalebi normally yogurt is used and the batter needs to be fermented for long hours. In this recipe, I have made vegan jalebis without any dairy products. This is a wonderful and fuss-free recipe that everyone can enjoy.

Basic Ingredients for Jalebi

  • First- All purpose flour/Maida-Fresh all purpose flour would make nice and crispy jalebis.
  • Baking powder-Helps in puffing up the jalebis.
  • Saffron or food color-To give the jalebi a nice color.
  • Sugar-To make the syrup.
  • Oil-For deep frying the jalebis.

How to make Instant Vegan Jalebi?

To make the jalebi first step is to prepare the sugar syrup. Cook suagr and water in a saucepan for 3-5 minutes, the consistency should be slightly sticky. More or less like one string kind.

Now make the batter by adding all the ingredients for it in a mixing bowl. Stir and make a smooth free flow batter.

How to shape jalebis?

The confectionary shops use a muslin cloth to shape the jalebis. You could use a ketchup bottle or a piping bag for shaping the jalebis.

Shape the jalebis into the hot oil and deep fry from both sides until golden and crispy. Transfer the fried jalebis into the sugar syrup, soak for few seconds and remove from it.

Hot and crispy jalebis are ready to serve.

Serving Suggestions:

Enjoy the crispy deep-fried jalebis as such. If you’d like you can serve them with Rabri, Samosa, Poha, or Milk as well.

Equipment

Ingredients
  

  • 1 cup all-purpose flour/maida
  • /2 teaspoon baking powder
  • few saffron strands
  • 3/4 cup water
  • oil for frying

For syrup

  • 1 1/2 cup sugar
  • 1 cup water
  • 2-3 cardamom crushed

Instructions
 

  • In a saucepan add sugar and water, stir and let the sugar melt.
  • Cook it for 3-5 minutes or until the sticky sugar syrup is ready..
  • In a mixing bowl add flour, baking powder, saffron. Now add water little by little and make a smooth batter. Whisk to remove any lumps.
  • Heat oil in a wok on medium heat.
  • Transfer the batter into a ketchup bottle or piping bag.
  • Drop jalebi in a circular motion like pretzels into the hot oil.
  • Let them set and then flip to fry from both sides. Fry until jalebis are golden and crispy.
  • Transfer the fried jalebi into the syrup. Let it soak for 2-3 seconds and remove it in a plate.
  • Serve the jalebis warm.

Notes

  1. Do not make the batter too thick or to thin. It should be free-flowing consistency.
  2. Make sure your sugar syrup is one string consistency. Add some lemon juice drips to avoid crystalization.
  3. Fry the jalebis on low medium heat to ensure crispiness.
  4. Make sure the syrup is only warm when you add the fried jalebi. It should not be too hot or cold.

  5. I loved this instant version of Jalebi, otherwise it’s been a very long process, fermentation and all. This is super delicious and a perfect treat for us on lockdown period. The addition of chandi work on Jalebi really elevates the flavor.
