Indian Omelette ~ Without Eggs

We are in the third week of BM#41 and my theme for the week is E-N breakfast dishes from the “List of Breakfast Food” . For the first day I picked Indian Omelette with alphabet “I” from the list but since we don’t use egg in our food I made them without eggs , using besan or gram flour .

Breakfast for us (Punjabis) means Stuffed Parathas , Bread Jam Butter , Toast and Sandwich for weekdays and anything fried like Bread Pakoras , fritters , Spring rolls , Aloo Poori , etc on weekends. This is the regular habit but sometimes I get bored of it and deviate from usual habit and make something different . At that time this eggless omelette will be one of my favorite dish apart from few others. Sometimes I like to make it stuffed with sautéed mushrooms , or paneer filling to make it more delicious. So let’s start the recipe. Yum

Ingredients:
3/4 cup besan/gram flour
1 onion , chopped
1 tomato , chopped
1 green Chilli , chopped
1 teaspoon ginger , grated
Few coriander leaves , chopped

Spices & salt
1/2 teaspoon carom seeds
1/2 teaspoon cumin seeds
1/2 teaspoon coriander powder
1/2 teaspoon red Chilli powder
1/2 teaspoon garam masala
Salt to taste

1/4 cup water or as required
1 tablespoon oil

Method:
Sift gram flour in a bowl and add all the spices and salt. Stir it two to three times.
Now add chord tomatoes , onion , chillies , ginger and coriander leaves . Mix again . Slowly add water with one hand and stir quickly with spoon with other hand.
Add water till the batter becomes smooth and pouring consistency.
Heat a non stick pan and pour a teaspoon of oil over it .Spread a ladleful of batter over the preheated pan and let it cook , covered , for 3-5 minutes.

Flip and cook from other side for 2 minute.Repeat the same procedure for making rest of the omelette.
Remove from pan and serve hot with tomato ketchup and green chutney with a hot cup of tea.
