Nothing is better than freshly prepared home made sauces and flavorings. isn’t it right ? Well for me it’s always right. I will be preparing Mexican Cuisine in next few days and for that purpose I have to collect all of the ingredients. When I was searching for these things in the super market as soon as I peeped into the ingredients I was chuckled coz I knew that I can make it at home. So let’s start the recipe .yum
Ingredients:
3 tomatoes
1 medium onion
1 tablespoon olive oil
Salt to taste
1 teaspoon peppercorn powder
3 dried Kashmiri Red Chilli
½ cup of coriander leaves with stem
3 tablespoon white vinegar
1 teaspoon paprika
1 teaspoon cumin seed
½ teaspoon oregano
2 green chillies
Method:
Preheat oven to 350 degrees. Cut the ends off of the tomatoes, and peel and halve the onion. Place on baking tin and drizzle with olive oil. Add salt and pepper and mix well to ensure the vegetables are coated in the oil. Bake for 20 minutes, flipping once halfway through.
Remove the vegetables from the oven and let cool for 10 minutes.
Place them in a blender or food processor along with the onion, coriander, vinegar, kashmiri chilly , paprika, cumin seeds, green chilly and oregano. Blend until smooth.
Store in air tight container and use in Mexican tacos , sasa , tortillas , quesadilla etc.
Serve-1 1/2 cup sauce. Cooking time -30 minutes
Note: I have used 3 dried Kashmiri Chilli instead of 1 ancho ,1 cayenne and 1 chipotle as I can’t find it here.
