Haryanvi Thali

After relishing Rajasthani Dal Baati Churma now we have moved towards Haryana ,the land of farms ,milk ,roti and cattles.The cuisine is not as much famous compared to the neighboring states like Punjab but still Haryanvi food is best known for its simplicity and freshness.


Haryana is known  as the land of rotis either made up of Bajra, Jowar ,Besan or Wheat ,people there love hot rotis smeared with butter or ghee and they can eat the rotis as such only with green chilly and salt.

The state is wealthy in cattle and hence there is plenty of milk ,Haryana is the land of milk and milk based products.Buttermilk and Lassi are the famous drinks.Home made butter or called as Nooni ghee that is freshly churned from buttermilk on a daily basis is the must. They love to eat with this soft and tasty white butter with Khand  Boora.

I made a very simple and easy thali from the state and we all loved it.

Gajar Methi Sabzi

Ingredients:
1 cup carrots ,chopped
1 tablespoon methi ,chopped(I used dried methi)
1/2 teaspoon turmeric powder
salt to taste
1/2 teaspoon cumin seeds
2 teaspoon oil

Method:

Heat oil in a pan ,add cumin seeds.
Add chopped carrots ,salt and turmeric powder.Cook covered
Now add methi leaves and cook fro 5-7 minutes more.
Remove from heat and serve hot.

Serve-2 Cooking time-15 minutes

Masala Khichdi

Ingredients:
1/2 cup rice
2 tablespoon moong dal
1 cup mixed vegetables(capsicum,potato,carrot,peas,tomato,onion)
salt to taste
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
2 tablespoon ghee
water as required

Method:
Heat ghee in a pressure cooker ,add cumin seeds.
Now add all the chopped veggies, rice and dal.
Mix well and add salt and turmeric powder.
Add 3 cup water .Cook for 3-4 whistles.
Remove from heat and serve hot with butter.

Serve-2 Cooking time-20 minutes

Roti Makhan



Ingredients:
1 cup wheat flour
salt to taste
water as required
2 teaspoon oil
wheat flour for dusting
Ghee or white butter to smear

Method:
In a mixing bowl ,add wheat flour,salt and oil.Knead a soft and fine dough using enough water.
Make 6-8 small balls from dough.Dust one ball with dry flour and roll into a thin circle.
Heat a tava or pan and cook the roti from both sides.
Smear with white butter and serve hot.

Paratha

Ingredients:
1 cup wheat flour
salt to taste
water as required
wheat flour for dusting
1 tablespoon oil

Method:
In a mixing bowl ,add wheat flour and salt .Knead a soft dough using enough water.
Make 6-8 small balls from dough.Dust one ball with dry flour and roll into a thin circle.
Heat a tava or pan and roast the paratha from both sides using oil.
Serve hot.

Masala Chaas





Ingredients:
2 cup butermilk
1/4 teaspoon red chilli powder
1 green chilli,chopped
black salt to taste.
a pinch aseftida

Method:

Mix all ingredients in a mixing bowl.
Serve chilled.

  1. That is an wonderful spread of Haryanvi food. Everything on the platter looks scrumptious. i made gajar methi subzi last year for Indian states and loved the flavor of sweet carrot and slightly bitter methi combination.

  2. Wow, that is an amazing spread. All the dishes remind me of my Delhi visits where this cuisine is so popular. The Methi GAJJAR is a personal favorite along with Kadi pakoda..kudos you could prepare such a lovely spread inspite of little kids.

  3. Sapana, first of all — this is not a simple Haryanavi thali. This IS an elaborate thali with delicious dishes from Haryana. Second of all – I can't stop myself from drooling over all your yummy food. Good one.
