Haryanvi Kadhi Pakora

Haryanvi style Kadhi Pakora is a yogurt-based simple gravy dish dunked with soft and delicious deep-fried onion pakoras.

What is Haryanvi Kadhi?

Haryanvi kadhi is a yogurt based gravy dish dunked with spicy onion pakoras. Haryana state of India has abundance of milk and yogurt and butter, so the kadhi is also served with fresh homemade butter and somtimes added with fresh seasonal greens like amaranth seeds etc.

Basic Ingredients for Haryanvi Kadhi Pakoda:

The basic ingredients needed to make kadhi pakoda are listed below.

  • Firstly, Sour yogurt or buttermilk-If your yogurt or buttermilk is not sour, leave it on the kitchen counter overnight and make the kadhi the next day.
  • Besan/Gram flour-Any variety of besan is fine, either fine or coarse.
  • Spices-The The main spices needed are cumin, coriander, red chilli, ginger powder, and whole dry red chilli.
  • Onion To make the pakoda
  • Oil-for deep frying

How to make Haryanvi Kadhi?

The first step to make kadhi is to mix yogurt/buttermilk with besan and spices powder and whisk until it is combined well and there are not any lumps.

Now your mixture is ready, all you need to do is make the tempering with fenugreek, cumin, dry red chilli and aseftida in oil or ghee and transfer the yogurt besan mixture in it. After that you will need to a bit patient and keep stirring the kadhi on low medium heat until it boils like milk and settles down. Once a boil is done keep cooking and stirring in between on low medium heat for another 20-25 minutes.

Meanwhile make the pakoda batter and deep fry them in hot oil until golden and crispy.

The more you cook the kadhi, the more delicious it will become.

Equipment

Ingredients
  

  • 2 cups buttermilk
  • 5 tablespoon besan/gram flour
  • 2 green chilies chopped
  • 1 dry red chilli broken
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • a pinch asafetida
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • salt to taste
  • 1 teaspoon coriander powder
  • 1 tablespoon ghee

For Pakora

  • 1/2 cup besan
  • 1 onion chopped
  • 1 green chili chopped
  • salt to taste
  • a pinch soda
  • water as required
  • oil for frying

Instructions
 

For Kadhi

  • In a mixing bowl, add besan whisked buttermilk all sp[ices powder and salt. Whisk again until everything is well combined.
  • Heat ghee in a pan, add mustard seeds, cumin seeds, dry red chili, and asafetida.
  • Add green chilies and the buttermilk -besan mixture. Add 1 cup of water and let the mixture boil.
  • Once boiled let it simmer and cook for 20-25 minutes.
  • Remove from heat and set aside.

For pakoras

  • In a mixing bowl add all ingredients except water and oil.
  • Add little water just to bind the ingredients and make a thick batter for pakoras.
  • Heta oil in a pan and deep fry the pakoras until golden from both sides.
  • Drain the pakoda on paper towel and add in cooked kadhi.
  • Serve the hot kadhi pakora with rice.

Notes

Adjust the consitency of kadhi by adding more or less water.
