This week I will be posting recipes cooking for one and mostly those that I like to make when I am alone in the home. Couscous is so easy to cook with and you can do so many things with it. Recently it has become my comfort food. Lo likes it with a plain tempering of ghee and cumin seeds. So after feeding her I love making these kinds of comfort food which are ready in few minutes for me. This particular recipe is from BBC Food Magazine and is really amazing bursting with nice flavours and texture.Not to mention filling and healthy too.

Dish– Grilled Aubergine Tabbouleh

Ingredients:
1/2 cup couscous
1 cup aubergine ,diced
1 tomato, cut into small cubes
1/2 cup cucumber, cut into small cubes
2 tablespoon cilantro leaves,chopped
2 tablespoon mint leaves, chopped
2 teaspoon olive oil
1 garlic clove,minced
1 1/2 cup boiling water
For dressing
1/4 cup yoghurt
1 teaspoon lemon juice
1 teaspoon tahini
1 teaspoon honey
salt to taste
pepper to taste
Method:
Heat olive oil in a pan and add garlic cloves.Stir and add the aubergine. Cook for bout 10 minutes or until the aubergine is soft and golden.
In a mixing bowl add couscous. Pour the boiling water and cover with lid or cling film. Set aside.
In another small bowl add all the ingredients for dressing. Whisk to combine.
Once the couscous has absorbed all the water fluff it with a fork.Add in the cucumber, tomato, cilantro and mint leaves.
Pour the dressing over the couscous, stir, and add in the grilled aubergine.
Serve and enjoy.
Serve-1 Cooking time- 15 minutes
