Anzac Biscuits are the popular Australian biscuits which were named after Australian and New Zealand war troops. These biscuits were sent to soldiers as the ingredients would stay well for a long time.

We a group of fellow bloggers are doing” ABC Bake From around the World” themed baking for this month of April. If you follow my blog regularly you would have known that we do this kind of whole month mega marathon in a year. Just like last September Buffet on Table this month it would be A to Z baking throughout the month.I subcategorised this theme to make it more interesting and planning to make a healthier version of the traditional bakes. So for the first week, I will be doing cookies recipes from different countries.

The Anzac biscuits are slightly hard outside but very delicious and taste amazing with a cup of tea. In the pictures, I used my recent favourite goji berry tea that I am drinking every day. Normally flour, golden syrup and butter are used to make the Anzac biscuits but I substituted them with almond meal, maple syrup and coconut oil to make them more healthy.


I was on a long break from blogging and haven’t posted any recipe since January end. Recently my mother got very sick and it was an all of the sudden trauma for all of us. I wouldn’t want to cook or do anything, it’s like everything seems meaningless to me. My husband is always pushing me to start blogging again as he thinks this would help me keeping my mind away from all those things. He is telling me if I would stop doing what I love and enjoy so passionately it would be me who is going to be mentally sick. This is really hard but I guess I should try and think positively that all will be well in the end.

Anzac Biscuits

Anzac Biscuits are the popular Australian biscuits which were named after Australian ad New Zealand war troops. These biscuits were sent to soldiers as the ingredients would stay well for a long time.


Prep time: 00:10, Cook time: 00:20, Total time: 00:30
Yield: 20 cookies

Ingredients:
1 1/2 cup gluten free rolled oats
1 cup shredded coconut
1/2 cup almonds or almond meal
2 tablespoon coconut oil
2 tablespoon honey or maple syrup
3/4 cup warm water
1 teaspoon vanilla extract
To top
flaked almonds(optional)

Instructions:
Preheat oven to 350 F° and line a baking sheet with parchment paper.
In a food processor add rolled oats, coconut and almonds and make a fine powder.
Slowly add melted coconut oil, maple syrup and vanilla extract and warm water. Process until smooth.
Drop a spoonful of batter 2 inches apart onto the prepared baking tin.
Flatten the cookies with the back of spoon or glass. Sprinkle some flaked almonds on the top of each cookie.
Bake in preheated oven for 15 to 20 minutes or until golden in colour.
Remove from the oven and cool the cookies on wire rack.Store in air tight container. Serve and enjoy.

  3. Love how beautiful your Anzac cookies have come out. I agree with your husband about doing your favorite things. It does help deviate your thoughts. Glad your mom is recovering now. Looking forward to your rest of the bakes.
