A very simple yet traditional way to cook potatoes with few spices . I often made them in fasting days as a side dish with tikis and pakodis.
So let’s start the recipe .yum
4 medium sized potatoes , cut in lengthwise sticks
2 teaspoon ginger ,grated
1 teaspoon green chillies , chopped
1/2 teaspoon cumin seeds
Spices:
1/2 teaspoon coriander powder
1/2 teaspoon red chilly powder
1/2 teaspoon dried mango powder
1/2 teaspoon garam masala
Indian rock salt /Sendha namak or common salt as per taste
1/4 cup coriander leaves , chopped
2 tablespoon oil/ghee
Method:
Heat oil in a wok , add cumin seeds.
Stir for one minute and add grated ginger and green chillies.
Now add potato sticks , give a stir add salt and let it cook for 10 minutes with closed lid.
Open the lid and add all spices and cook for 5 minutes
Remove from heat , sprinkle chopped coriander and serve with chutney , curd or tikis.
Serve-2. Cooking time-25-30minutes
Note: I have used home made spices you may use as per your choice.
We don’t use tomatoes in fast , but its optional you may add if you do so.
So simple.. Perfect with rotis !!
