Double Chocolate Pudding Popsicles

Double chocolate pudding Popsicle is a super delicious chocolate pudding Popsicle that tastes just amazing and is a wonderful treat for your kids these summers.

These double chocolate pudding popsicles are so creamy and tasty that you won’t stop eating a few. The best part is they are super easy to make, no whipping of cream or churning required.

Basically you will just need 4 ingredients to make them and the posicles will be ready in just few seconds. I mean ofcourse you definitely need to pop them in freezer.

If you ever have leftover chocolate pudding, you could always make these Popsicle and enjoy the leftovers pudding with more fun. When I first saw the recipe on Pavani’s blog Cookshideout, I immediately bookmarked to try it.

Ingredients needed for Chocolate Popsicles

  • First, Corn starch/ Corn Flour-The white corn starch helps in thickening of the chocolate pudding. If you don’t have corn starch you could always use arrowroot powder, or custard powder instead.
  • Cocoa Powder– Cocoa powder to add the chocolate goodness. To make the popsicles more intriguing you could use raw cacao powder instead.
  • Milk– Whole full-fat milk will make the creamy and tasty popsicles, but if you’d like you can always replace it with low-fat milk.
  • Sugar-I have used brown sugar to make the popsicles but you could also use plain white or castor sugar.
  • Chocolate Chips– Dark or milk chocolate chips or you could use chopped cooking chocolate instead.

How to make Chocolate pudding popsicle?

First of all, we will be making chocolate pudding. Heat milk in a pan and bring it to boil. Meanwhile in another mixing bowl add corn starch, cocoa powder, and 1/4 cup of milk. Mix well to combine.

Now add this cornstarch cocoa slurry into the boiling milk, keep stirring and make sure to set the heat on low. Add sugar and cook the pudding until it starts thickening of desired consistency.

Let it cool completely before popping in the ice lolly molds. Keep in freezer for 6 hours or until overnight.When ready to serve run the molds under warm water so they can smoothly pop out of it.

Serving Suggestions and Variations

Serve the chocolate pudding popsicle as an evening snack or after meal desserts. For variations, you could add white chocolate chips, chocolate cookies, etc.

Equipment

  • Saucepan
  • Ice lolly molds
  • Ice lolly sticks

Ingredients
  

  • 2 cups milk
  • 3 tablespoons corn starch
  • 1/4 cup cocoa powder
  • 1/4 cup chocolate chips
  • 2 tablespoon brown sugar
  • chocolate vermicelli to sprinkle

Instructions
 

  • In a mixing bowl add corn starch, 1/4 cup of milk, and cocoa powder. mix well and set aside.
  • Heat milk in a saucepan and bring it to boil.
  • Now slowly add in the cornstarch and cocoa mixture, keep stirring. Make sure to keep the heat on low.
  • Mix well, add sugar and let it cook until it starts thickening, and chocolate pudding is formed.
  • Turn off the heat and add chocolate chips, mix well to combine until chocolate chips are melted.
  • Cool completely and transfer into ice lolly molds. Sprinkle some chocolate vermicelli on top.
  • Place in the freezer for about 6 hours to overnight.
  • Remove from molds and serve.
