Christmas Shortbread Cookies

Christmas Shortbread Cookies: Melt in mouth kind buttery soft and delicious shortbread cookies are perfect for Christmas season. These Christmas cookies would make the easiest and delicious Christmas gift to give to family and friends.

I made the cookies to give to some of my Husband’s colleagues for Christmas but they were all gone just in three days. Now I have to make another batch which I am going to hide or else the naughty girls and their dad would finish them all. The recipe is super simple and basically just needs three ingredients. I had rainbow sprinkles at home so I used them but for my next batch, I am going to use Christmas sprinkles to make them more festive.

Ingredients:
4 cups all-purpose flour
2 cups unsalted cold butter, cut into cubes
1/2 teaspoon salt
1 cup sugar

To Cover
2 cups chocolate chips
1/4 cup sugar sprinkles

Method:

In a mixing bowl add butter and sugar. Whisk wit an electric mixer until soft and creamy.
Once butter and sugar are creamed add 3 1/2 cup flour in it one cup at a time. Add the remaining 1/2 cup flour and make the dough soft but not sticky.
Cover it with cling wrap and let it chill for about 30 minutes. Preheat the oven to 180° C and line two baking sheets with parchment paper.
Roll out the dough into a 1/4 inch thick sheet and cut out cookie shapes using Christmas cookie cutter dusted with flour.
place the cookies 2 inches apart on the baking sheet. Bake in preheated oven for about 15to 20 minutes or until slightly golden.
Remove from oven. Cool on a wire rack.

In a microwave, safe bowl melts the chocolate chips for a minute. Dip each cookie from one side into the melted chocolate and sprinkle some sugar sprinkles.
Place them on a parchment paper-lined baking sheets. Store in air tight container once the chocolate is set.

Serve and enjoy.

Serve – 40 – 50 cookies Baking Time- 15 minutes
