Chilly Cheese Toast

We are in the next round of blogging marathon i.e BM#42 and as per from the themes I opted Easy Tiffin Recipes that can also be served as evening snacks . For the first day of the week I made these simple and tasty Chilli Cheese Toast. Recipe adapted from Sailu’s .

My daughter got this habit of not eating cheese , butter etc from me . Seriously I never wanted her to hate them as I do but somehow she got it . So when I made these toast , she asked is there any cheese in it and I said “No” may be just a little bit . Then I said try only one bite and if you don’t like then do not eat it. She hesitantly took one bite and what? she loved them . And you won’t believe she forced me to made the toast for three consecutive days for her breakfast and evening snack.That was really funny but I was happy . Even I , who literally hate cheese and never had a bite of it , liked them also.So let’s start the recipe. Yum

Ingredients:
6 sandwich bread slices
1/2 green bell pepper , chopped
1/2 red bell pepper , chopped
1/2 yellow bell pepper , chopped
1 red onion , chopped
1 tomato ,chopped
1 green chilly , finely chopped

Few fresh basil leaves, chopped
1 teaspoon mixed Italian herbs
1 teaspoon peppercorn , crushed
1/2 teaspoon red chilly powder
Salt to taste
Cheddar cheese as required
Butter as required

Method:
Take all the chopped vegetables in a bowl , add basil leaves , mixed herbs, peppercorn , red chilly powder and salt. Mix well.
Apply butter on one side of bread slices and place an even layer of vegetable filling over it. Sprinkle grated cheddar cheese over it.
Repeat the same with remaining bread slices.
Place the bread slices in preheated oven at 180 degrees for 10-15 minutes till cheese melts .Alternatively you can toast the bread on preheated nonstick Tawa till crust becomes toasted and crispy.

Remove and serve warm with tomato ketchup.

Serve-3. Preparation time-15 minutes

Notes: Here I used cheddar cheese but you may use Mozerella , or any processed cheese.
