Kala Chana is our family favorite curry.I alwyas soak the black chana a night before to make ahead as it saves the cooking time..This curry tastes best with roti but you may also try pairing it with rice.
Ingredients:
250 g black chickpea
1 cup onion paste
2 cup tomato purée
1 teaspoon ginger paste
21 tablespoon garlic paste
2 teaspoon green chilly paste
1/2 cup coriander leaves,chopped
1 teaspoon turmeric powder
1 teaspoon red chilly powder
2 teaspoon coriander powder
2 teaspoon garam masala
salt to taste
1 teaspoon ground fenugreek seeds
Water as required
Method:
Wash and soak black chickpea in enough or 6-8 hours.
Cook them in a pressure cooker with 1 tsp salt (add water as needed) for 8 whistles.
Heat oil in a pan add fenugreek powder,sauté add garlic and onion paste,sauté till it becomes golden in color.Add ginger pasté and all spices .stir and add tomato and chilly paste,sauté till oil comes out.
Add this masala mix into boiled chickpea and add 1 glass water ,cook for another 20 minutes till all spices mix in curry.
Garnish with chopped coriander and garam masala .Serve with rice and roti.
